Ingredients

Scale

For the Red Velvet Buns:

  • 4 brioche burger buns

  • 1 tablespoon unsweetened cocoa powder

  • Red gel food coloring (enough to reach deep red hue)

  • 1 tablespoon melted butter, for brushing
(Optional: Use pre-made red velvet brioche buns if available)

For the Patties:

  • 1 pound ground beef (80/20 blend for juiciness)

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 tablespoon Worcestershire sauce

For the Toppings:

  • 8 strips crispy bacon

  • 4 slices sharp cheddar cheese

  • Green leaf lettuce

  • Tomato slices

For the Electric Blue Sauce:

  • ¼ cup mayonnaise

  • 1 tablespoon ranch dressing

  • A few drops blue gel food coloring

  • Optional: pinch of garlic powder or a splash of lemon juice for zing

Instructions

  1. Prepare the Buns:
In a small bowl, mix melted butter with cocoa powder and red food coloring until smooth. Brush over the tops of brioche buns. Toast lightly in a skillet or oven at 350°F (175°C) for 5 minutes.

  2. Make the Patties:
In a mixing bowl, combine ground beef with salt, pepper, garlic powder, paprika, and Worcestershire. Gently mix and shape into 4 equal patties. Press a slight dent into the center of each to prevent puffing.

  3. Cook the Patties:
Grill or pan-sear over medium-high heat for 3–4 minutes per side, or until your desired doneness. Add cheddar cheese during the last minute and cover to melt.

  4. Crisp the Bacon:
Cook bacon strips in a skillet over medium heat until golden and crispy. Drain on paper towels.

  5. Make the Electric Blue Sauce:
In a small bowl, whisk together mayo, ranch dressing, and blue food coloring. Add optional garlic powder or lemon juice if desired. Chill until ready to use.

  6. Assemble the Burgers:
Layer each burger starting with the bottom bun, lettuce, tomato slice, cheesy patty, bacon, and a generous drizzle of blue sauce. Top with the red velvet bun lid. Serve immediately and enjoy!

Notes

  • You can make the sauce and bacon a day ahead to save time when you’re ready to grill.
