Coconut Lime Daiquiri Jello Shots are a tropical twist on a party classic! These fun, layered shots combine tangy lime gelatin with creamy coconut for a mini dessert cocktail that’s as pretty as it is delicious. Perfect for summer gatherings, beach-themed parties, or a festive Friday night. They’re easy to make ahead—and even easier to love!
Ingredients
Lime Layer:

1 box (3 oz) lime-flavored gelatin

1 cup boiling water

½ cup cold water

½ cup KeKe Key Lime Pie liqueur (or other lime cream liqueur)
Coconut Layer:

¾ cup coconut water, divided

¼ cup sweetened condensed milk

1 envelope (0.25 oz) unflavored gelatin

Optional: 1 oz white rum
Garnish:

Lime wedges (small)

Toasted coconut flakes

Whipped cream (optional)
Instructions

Make the Lime Layer:
In a bowl, dissolve lime gelatin in 1 cup boiling water. Stir well until fully dissolved. Add ½ cup cold water and ½ cup Key Lime Pie liqueur. Mix thoroughly. Pour into 2 oz shot cups, filling each halfway. Refrigerate for 60–90 minutes until set. -
Prepare the Coconut Layer:
Warm ½ cup coconut water in a small saucepan (do not boil). Sprinkle unflavored gelatin over the warm water and whisk until fully dissolved. Stir in ¼ cup sweetened condensed milk and the remaining ¼ cup coconut water. Add 1 oz white rum if using. Let the mixture cool to room temperature. -
Layer the Coconut Mixture:
Once the lime layer is set, pour the cooled coconut mixture over each shot to fill to the top. Return to the fridge and chill for another 1–2 hours until fully set.

Garnish and Serve:
Just before serving, top with a small swirl of whipped cream, a lime wedge, and a sprinkle of toasted coconut flakes.
Notes

For best results, make sure the coconut layer is fully cooled before pouring to avoid melting the lime layer.

These can be made up to 4 days ahead—just store covered in the fridge without garnishes.

To toast coconut: spread flakes on a baking sheet and bake at 350°F (175°C) for 5–7 minutes, stirring once, until golden brown.

Skip the rum and use extra coconut water for a non-alcoholic version that’s still full of tropical flavor.
