For the Jello Filling

  • 1 (3 oz) box strawberry Jello

  • ½ cup boiling water

  • ¼ cup cold water

  • ½ cup vodka (vanilla or whipped cream flavored works great)

For the Strawberries

  • 1215 large fresh strawberries (firm and ripe)

For Dipping

  • 1 cup semi-sweet or dark chocolate chips

  • 1 tsp coconut oil or shortening (optional, for smoother melting)

Optional Drizzle

  • ¼ cup white chocolate chips (for decorative drizzle)


Instructions

  1. Prep the Strawberries
    Wash and thoroughly dry the strawberries. Using a small paring knife or melon baller, carefully hollow out the centers, creating a cavity for the Jello.

  2. Make the Jello Mixture
    In a bowl, dissolve the strawberry Jello in ½ cup boiling water, stirring for about 2 minutes. Add ¼ cup cold water and ½ cup vodka. Stir well and let the mixture cool slightly before filling.

  3. Fill the Strawberries
    Place the hollowed strawberries upright in an egg carton or mini muffin pan. Carefully pour the Jello mixture into each strawberry. Chill in the fridge for 2–3 hours until fully set.

  4. Dip in Chocolate
    Melt the chocolate chips with coconut oil in the microwave in 30-second intervals, stirring between each, until smooth. Dip each Jello-filled strawberry halfway into the chocolate and place on parchment paper. Chill again until the chocolate hardens (about 10–15 minutes).

  5. Optional: Add White Chocolate Drizzle
    Melt white chocolate chips and drizzle over the dipped strawberries using a fork or piping bag for a decorative touch. Let set before serving.

Notes

  • Use an egg carton or mini muffin tin to keep strawberries upright while chilling. It really helps with stability!

  • For a non-alcoholic version, swap vodka with cold water or fruit juice.

  • Flavored vodka (like whipped cream or strawberry) gives an extra sweet kick—highly recommended.

  • Don’t overfill the strawberries with Jello—the liquid expands just a bit as it sets.

 

  • These are best enjoyed within 24–36 hours. Store in the fridge in a single layer to keep them looking their best.
