Candied Pineapple Skittle Rings

Candied Pineapple Skittle Rings: A Boozy Rainbow Treat That Brings the Party to Life

  • Author: Sam

Description

Candied Pineapple Skittle Rings are a vibrant, rum-soaked fruit snack that’s part candy, part cocktail, and all about the fun. Juicy pineapple slices soak in tropical rum and simple syrup, then get tinted in rainbow hues, glossed with a sweet candy glaze, and finished with Skittles or gummies. Perfect for party trays, brunch boards, or anytime you want to serve up color and flavor that pops! A showstopping no-bake recipe you’ll make again and again.

Ingredients

Scale
  • 1 can (12–16 slices) pineapple rings, drained and patted dry

  • ¾ cup tropical fruit rum (Malibu, Bacardi Tropical, etc.)

  • ½ cup simple syrup

  • Gel food coloring (neon or pastel rainbow colors work best)

  • ½ cup clear corn syrup (or gummy glaze)

  • Skittles, gumdrops, or rainbow gummies (for garnish)

Instructions

  • Dry the Pineapple Rings
Drain canned pineapple rings thoroughly and pat them dry with paper towels. This helps them soak and glaze properly.

  • Soak in Boozy Syrup
In a bowl, mix together tropical fruit rum and simple syrup. Place the pineapple rings in a shallow dish or container and pour the mixture over them. Refrigerate and soak for 1–2 hours.

  • Add Food Coloring
Divide soaked rings into separate bowls. Add 1–2 drops of gel food coloring to each bowl and gently turn the rings until evenly tinted. Let sit for 10–15 minutes to absorb the color.

  • Apply Candy Gloss
Transfer colored rings to a tray lined with parchment. Brush each ring with a thin layer of corn syrup or gummy glaze to create a glossy candy finish.

  • Chill to Set
Chill the glazed rings for 20–30 minutes in the fridge until the glaze is tacky and set.

  • Garnish and Serve
Arrange rings on a serving tray and garnish with Skittles, gumdrops, or gummies in the centers or in between the rings. Serve chilled for best texture.

Notes

  • Make it kid-friendly: Substitute rum with pineapple juice or tropical fruit punch for an alcohol-free version.

  • Use gel food coloring for the most vibrant results—liquid color can water down the pineapple.

  • Want extra sparkle? Roll the edges of glazed rings in colored sugar or crushed candy.

  • Storage tip: Store in the fridge in an airtight container for up to 2 days. Garnish just before serving to keep candies crisp.

  • Party tray bonus: These rings pair beautifully with tropical cocktails and charcuterie boards!
